This takes 10 minutes of prep (including the rice).
2 tbs olive oil
1 onion chopped
4 cloves garlic
2 large potatoes peeled and diced
1/2 cup diced spanish chorizo, or any other sausage you have
salt and pepper to taste
saute the onions, garlic and chorizo while peeling and dicing the potato. pour in the chickpeas and add two more jars (or cans) of water. add the potato. simmer until everything is tender.
serve with rice (which we all know doesn’t take 10 minutes to prep!). this recipe is also very very inexpensive and my family LOVED it.
