Here is my recipe for
Cranberry Pecan Granola
1 – 42 oz canister of rolled oats
1/2 cup melted coconut oil
3 cups chopped pecans
2tbs cinnamon ( leave this out if you don’t like it, but Neil is a huge fan… So we always add it!)
1/2 zest of one orange
1/2 tsp salt
Add cranberries in last 1-2 cups depending on how fruity you want it.
Melt coconut oil, add zest and pour over oats. Add pecans, cinnamon and salt and stir well, pour honey per and mix thoroughly.
Bake for at stirring every 30 minutes until it is nicely toasted. Make sure you add the cranberries after baking so they don’t burn.
