Cranberry pecan granola

Here is my recipe for
Cranberry Pecan Granola

1 – 42 oz canister of rolled oats
1/2 cup melted coconut oil
3 cups chopped pecans
2tbs cinnamon ( leave this out if you don’t like it, but Neil is a huge fan… So we always add it!)
1cup honey
1/2 zest of one orange
1/2 tsp salt
Add cranberries in last 1-2 cups depending on how fruity you want it.

Melt coconut oil, add zest and pour over oats. Add pecans, cinnamon and salt and stir well, pour honey per and mix thoroughly.

Bake for at stirring every 30 minutes until it is nicely toasted. Make sure you add the cranberries after baking so they don’t burn.





All golden and delish!

    Looks good! I like the orange zest addition. Speaking of rolled oats, I found black BUGS in my week-old canister of oats yesterday. GROSS!!!

      Well, you could take the oats back to the store and turn them in for a new canister. But if you can’t do an agreeable store return then, give the oats to a friend who has chickens and the chickens will eat the oats for dinner and the bugs for desert. Remember the old adage: “One person’s garbage is another chicken’s treat…”
