Found: French Fatback!

After 4 years in France, I’ve found the french version of fatback.

It’s called poitrine salée. Here it is cooking on the raclette-maker last night when we had friends over.

    Like…then you eat it? I thought fatback was put into a pot of green beans, etc…

    what are you kidding? Of course you eat fatback. Usually as a side to collard greens or something.
