A couple of weeks ago I participated in the making of about 8 gallons of saurkraut so that I could learn the ropes. The pink jar is from that class and has tasty beets, carrots and red onions. Mine is a simple cabbage, red onion and a couple of tiny purple carrots from my garden. I used 5 heads of organic cabbage and got about 4 qts worth. I used a small bottle to pound it down, but you can use your hands to massage. This coming year I would like to grow my own cabbage and ferment it.
