Flourless Chocolate Cake

Going glutten free (isn't everybody?) reminded me that flourless chocolate cakes might need to make a comeback in my kitchen. Here's the recipe I used last night. The only change I made was to beat the eggs and sugar together until thick and airy and then fold in the chocolate. Yummers.

    What's all the fuss? I've been eating gluten free for years, it comes inside the baked goods, at no extra charge whatsoever!

    I went Gluten Free once... but, by the 3rd day of that empty non-bloated feeling I couldn't take it anymore and I sneaked into the kitchen and snorted a half a spoon of flour so I could think things through clearly. I later got caught however cause of the white dust blowby on my lapel...; after the bust I eventually got onto a gluten-control & replacement program life-style-change of just a single dose of Mom's baked snacks each morning with coffee. Since that time I seem to have been able to manage a pretty normal life. Sometimes I have a crazy urge to go back and eat half a chocolate cake or maybe stuff a 8-bread-slice sandwich into my lunch-bag before anyone notices but, I know it's not "right" and definitely not worth "coming down" and so far, I've managed to stay straight and my morning dose of just a few baked-snacks (though it's never fully satisfying... like the old days...) seems to keep me clean. (At least on the outside...) Yea, I guess I can recommend it... I think... (I'm also looking into PETA membership as an option).

    well, i am glad to hear that you dealt properly with your glutten habit...

    so far on my end it hasn't been too much of a struggle. there are some glutten free baked products that try to pretend they are delicious. unfortunately they send me running for the loo like a british tourist with the tanzania trots...
