River Cottage Pear Cake (or apple)

i watched this video, or shall i say, i made the mistake of watching River Cottage Cake video

we have a lot of apples that were given to us by a friend who has several apple trees. we have given apples away, made compote, made pie filling, made cakes, muffins, pancakes, tarte titan, given some away… chances are that if you came by this week you were invited for apple ‘something’ and were sent home with apples. too many apples… what a pleasant sort of problem to have.

here is the recipe if you don’t want to watch the whole video. i will be taking this to church in the morning for our meal together.

i adapted it a wee bit and i will note where…

River Cottage Apple Cake

6 apples, peeled, cored and halfed

1 knob butter (about 1/8 cup)

1/3 c sugar

1/4 c cognac (my addition)

300 gr butter

250 gr sugar

150 gr flour

150 gr ground almonds

pinch cinnamon


caramelize the apple halves in the butter and sugar to a light caramel, add cognac and cook for another 3-4 min (add an optional pinch of salt). set aside. beat butter until lighter, add sugar and 4 eggs, one at a time. add flour and almonds, pinch of cinnamon. pour batter into a buttered spring form pan and place apples on top one by one, pour lovely cognac caramel juicyness on top. bake for 40 min at 190c (or  375f).
