Make this recipe instead! Inspired by lunch at my friend Marie’s last week this salad is full of flavor and a meal in itself.
Zucchini and Chick Pea Salad
4 small zuk’s grated long and leggy
2 carrots grated slim and slender
1 c chick peas
1/2 c spouts (wheat and mung beans used here)
1 tsp sesame oil
1 clove garlic crushed
After you grate the zuks sprinkle them wiith 1/2 tsp sea salt and mix through. Grate the carrots. You will find that your zuks are releasing their water, squeeeeeeze the water out. Add in the remaining ingredients and allow to sit for a few min. Enjoy!! This will serve 2-3 people as a main dish or 6 as a side.
