White bean and oat burger with cucumber salad

Experimentation in vegetation lives on…

White Bean and Oat burger… try it, you’ll like it.

3 c white beans

1 c oats

1 egg (or 1 tbs oat bran)

1/2 tsp cumin

2 tbs chopped fresh parsley

2 tbs chopped fresh cilantro

1 small minced onion

1/2 tsp salt (or to taste)

freshly ground pepper

*seasoned bread crumbs to coat

*olive oil to fry

Mix all together and drop with a scooper on to the breadcrumb plate. Pat down into a patty and coat both sides (it firms up in cooking, don’t worry!). Cook on medium heat in olive oil and flip once they begin to brown and firm up. About 5 min each side.


Cucumber salad

2 cucumbers sliced thinly

2 minced garlic cloves (you can back up to 1 on this, but hey, we never do).

1 tsp lemon juice (or vinegar in a pinch – I used balsamic)

1 tbs greek yogurt

1 tbs olive oil

salt and pepper to taste

mix everything together but the cucs… then add them in last.


I served this on part ww indian fry bread…

Partial ww Indian Fry Bread

1.5 c flour

1 c ww flour

1 tbs baking powder

1 tsp salt

1 c plus about 2 tb milk

Mix all together until is forms a cohesive dough and can be rolled into small burger sized disks (don’t over work dough). Fry immediately in oil on each side for about 3 min per side.  I place one bean burger on top of fry bread and topped with cuc salad. It was a massssssive hit. I wanted more, but one serving is quite filling.

    You have a new blog design, cool! :) and the bean burgers look good too. I had a veggie burger for dinner last night … Handcrafted by Trader Joe’s :-)

      but is it artisan??! haha. are they good? i’d love to be able to pull one out of the freezer and not always have to make them, but i hesitate. i’m not sure if they are good.

    I like them! Do they taste like regular hamburgers? Not a chance. But for what they are, they’re tasty little critters. Btw, these are the only veggie burgers I’ve had, so I have no other point of reference :)
